SESSION 6: GREEN TEA

In each session, we’ll begin with a brief recap of Tea 101 material, then move quickly into tasting and comparing examples of the specific style on which we’re focusing.
Just in time for the hot weather, Session 6 will focus on cooling green teas. We’ll learn about the major processing differences which distinguish the Chinese and Japanese families of green tea, explore the ways these techniques come across in the cup, and taste the results of important variations in processing within the styles. We’ll also spend a little time on the many myths and bits of misinformation which often confuse drinkers of green tea in the West.
